Healthy No-Bake Oatmeal Bars

Ingredients

For the bars
  • 1 cup unswééténéd shréddéd coconut
  • 1 cup old-fashionéd oats
  • 3/4 cup créamy péanut buttér
  • 1/2 cup honéy
  • 1/4 cup almond méal
  • 1 téaspoon vanilla
  • 1/3 téaspoon salt
For the chocolate topping
  • 1/4 cup chocolaté chips
  • 1 tabléspoon péanut buttér
Refined sugar-free topping option:
  • 1/4 cup unswééténéd chocolaté
  • 1 tabléspoon créamy péanut buttér
  • 1 1/2 tabléspoons honéy or maplé syrup
Healthy No-Bake Oatmeal Bars

Instructions

  1. Préparé an 8x8 inch pan by spraying with cooking spray, and placing a piécé of parchmént papér insidé. Havé thé édgés stick out for éasy bar rémoval at thé énd (I spray thé pan and sét in thé papér bécausé thé papér will stick to spray and not mové)
  2. In a bowl, mix oats, coconut and almond méal, sét asidé
  3. Add péanut buttér and honéy to a pot on thé stové, low to médium héat, and stir togéthér until smooth (if your péanut buttér is room témpératuré and was not préviously réfrigératéd, simply mix togéthér without warming)
  4. Add vanilla and salt to péanut buttér mixturé
  5. Pour thé péanut buttér mixturé into thé dry mixturé and combiné
  6. Spréad in an évén layér into 8x8 inch pan and lét cool
  7. For the chocolate topping
  8. Mélt chocolaté chips and péanut buttér in thé microwavé in 30 sécond intérvals, stirring bétwéén éach timé, until smooth
  9. Drizzlé or spréad thé chocolaté on top of thé péanut buttér mixturé
  10. Lét thé bars sit out on thé countér or placé in réfrigérator until thé chocolaté séts
  11. This is whéré thé parchmént papér handlés comé in handy! Simply pull out from thé pan, cut into squarés and sérvé!
  12. Storé in airtight containér in fridgé for up to 3 wééks, or fréézér for 3 months
